I love a good drink for breakfast.  I rarely take the time to make myself a meal, but I can always drop some ingredients into my BlendTec and whip up a treat.  At this time of year, I generally lean towards toasty warm beverages but I found myself wanting a dessert like treat the other day and came up with this yummy smoothie.  Even my husband loved it, which is a big deal!  You just can’t go wrong with a Pumpkin Cheesecake Smoothie (in fact, my kids and I are drinking one of these beauties a day right now — we love this time of year with all of its fantabulous flavors!).

The pumpkin is a super healthy ingredient in this smoothie, in addition to being a tasty autumn flavor.  Pumpkin has been touted as being healthy for the heart, aiding in weight loss, and even being beneficial to your skin.  What an awesome super food!  I picked cottage cheese for my protein source because it is rich and creamy and chock full of protein.  The spices are all healthy options, as well, with benefits for blood sugar levels and circulation.

  • 1/2 cup unsweetened almond milk
  • 1/2 cup water
  • 1 cup low fat cottage cheese
  • 1/2 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • 1/2 tsp caramel extract
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/8 tsp pure stevia extract or more to taste
  • 6 ice cubes
  • Place ingredients into blender in order and blend until desired consistency.
