- Place the mozzarella cheese and cream cheese into a microwave-safe bowl. Microwave for 1 minute, stir and continue to heat at 30-second intervals until the cheese is completely melted and well blended.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and Swerve sweetener.
- Add in the melted cheese, and knead it into the dry ingredients with your hands.
- Once combined, add the egg and vanilla extract. Beat the mixture on high until thoroughly mixed.
- Place the dough into the fridge for 30 minutes.
- Remove the dough from the fridge and form it into 16 even-sized balls.
- In a small bowl, combine the cinnamon and granulated sweetener until well combined.
- Brush the butter onto each of the bagel bite dough balls.
- Roll the butter-coated bites into the cinnamon/sweetener mixture, and place them onto a well-greased baking sheet.
- Bake for 10 minutes until browned and cooked through.
Tips for Making Keto Bagel Bites
Don’t skimp on letting the dough balls chill in the fridge. This is an important part of chilling them so that they hold their shape while they’re baking. If they don’t chill, they may flatten out while they’re baking and become more of a “cookie” shape.
How do I store Keto cinnamon sugar bites?
Since you want to keep them soft and delicious, storing them in an airtight container is a must. They should also be stored in the fridge due to the added cheese ingredients.
Can I fry these bagel bites instead of baking them?
You might be able to use the air fryer for cooking them easily, but don’t actually fry these bite-sized treats in oil! That would take away from the recipe and load them down with grease.
Can I use other toppings for these keto dough balls?
If you’re not a fan of using the cinnamon sugar mixture, change it up! Use ingredients that are keto-friendly so that they fall in line with the recipe.
Some delicious options could be keto frosting, sugar-free caramel sauce, or anything else that you crave!
